Hi all! I just read through a bunch of this thread and hope you all don't mind my jumping in so late on the thread. I just started phase 1 yesterday. Not my first time, more like my 10th probably... I've been on and off south beach for 4 years now but basically off for the past year and have determined it seems to be the only diet plan that works for me that I can actually stick to. So! I'm re-commited with about 30 pounds to lose to get back to where souch beach brought me the first time around and i'm convinced I'll be able to get there. I've got christmas on the beach with my family this year and I want to be looking good! Looking forward to being able to look to you guys for support and to be able to lend as much support as I can as well! I hope everyone's week is off to a good start! (i'm about 12 hours ahead of you guys as i live over in Hong Kong so my monday's nearly finished now :-)

Welcome to Christine and Tory!

I am the same way, SB is the only thing that really works for me or that I can "stick to". Phase 1 is hard for me. I use to do it Mon-Sat. Strictly phase 1 and then I took SUndays off to do whatever I wanted. I lost over 30 lbs doing that but now I am trying something a little different.
I do mostly phase 1 except I let myself have a piece of whole wheat toast and I also eat strawberries and some grapes too.
I am trying to not be so crazy and eat "normal" this time around.

Thanks for the welcome, reading this thread really gave me the inspiration I needed to try this diet. I hope it works well for me, I've been struggling for some time. Today has been another good day on the beach...haven't had dinner yet though! I tried the sugar free jello mixed with plain yogurt that I read earlier and that was GREAT! I found a recipe for BLT Chicken Salad which I am trying for dinner tonight. Has anyone tried the cauliflower "mashed potatoes" recipe?

Thanks for the warm welcome Tasha and Kama! And welcome Christine as well to your first go with South Beach. My Aunt was the first person to inspire me to do this diet, she lost 60 lbs. My mom lost 40 and my dad lost 30. My parents have kept the weight off for 2+ years now which is another inspiration for me. My aunt has slipped and she's starting back on P1 with me now. I'll try to convince her to join this site.
Things are going well so far. I had a great day yesterday, tried to consume as many vegetables as possible though I could have been a bit better.
I like the V8 as a veggie serving and its so easy to grab and go with. Do you know if it is okay if I have 2 of the 6 oz. cans/day or should I stick to 1? I don't want to overdo it, I just like it

Tea, It use to be that we could have 6oz of the V8. I am not sure if that has changed though. I go by the original book but there are a few out now that has been updated.

Christine, I have tried the Cauliflower (mashed potatoe) recipe and it isn't too bad. I had to add some salt and pepper and some smart balance to it to give it some flavor. I also added cheese to it which gave it more flavor.

Hey all, sorry I have not been here much, been busy with mom. Does anyone know if this diet would be good for someone who is insulin dependent? I'm thinking of putting mom on it, if her dr agrees.

Thanks, Tasha, yeah I have the old book too and 1 of the older cookbooks that's how I base my whole diet. I should check on the updates though. Are they available online do you know?
Christine, I've tried the cauliflower mashed as well and I think its OK, I agree with Tasha, it needs cheese to give it a bit of flavor. But it doesn't really replicate any sort of mashed potato sensation for me...
Kama, I think any Low GI diet is good for insulin dependents, I just checked out the site that someone else posted yesterday: My Favorite Low Carb and Low GI Foods
seems pretty informative
my aunt went on this diet specifically to regulate her sugar levels and it helped a lot. Not sure if this would apply exactly to your mom. Of course, she should definitely check with her doctor first.

Thanks for the info, Tasha! I am gonna print this and show it to her dr. I am trying to get all sorts of info to help.
I have not tried the cauliflower, I did use it to replicate a cream soup(you puree it) and that was good, but you do need to spice it up.
