One of my favourite recipes, is EASY and makes plenty enough to have later (easy to warm-up, too). I'm the only vegetarian amongst my friends, but most of them have said it tastes like jambalaya without the meat. Please excuse the lack of proper cooking terminology, I'm no Emeril! Saute mushrooms, green peppers, onions and garlic (it only takes a small amount of olive oil, or I just use water and a splash of lemon juice) Add a large jar (or homemade if you have time) of salsa (whichever flavour you prefer, I use garlic lovers) Turn the heat down and simmer for 5 minutes Add a large can (or fresh, presoaked if you have time) of kidney beans (I prefer the taste of the dark red) (HINT: I rinse the canned type before adding - cuts down on the moisture and oily taste of the can) Cook on low heat until beans are warmed completely through (be sure to stir frequently - burns easily) Serve over brown rice (I actually mix it in, to make things even easier and to cut down on the amount of rice I'm eating) If you don't like spicy food, cut down on the garlic and use a mild salsa. If you have questions, let me know. ENJOY! : )

Try going to All Recipes.com or Better Homes and Gardens.com. Both websites have lots of recipes, both with and without meat. I had a friend make a casserole once using tofu. He put in snow peas, baby corn, baby carrots and chunks of tofu. He poured broth over it and baked it. It was pretty good. You could put just about anything you want in it. That's pretty simple. I'd never had tofu before, so I didn't know what I was eating until afterward. I was surprised.
