I cut up some zucchini, cook it in a non stick pan with a little bit of spray, I don't overcook mine, I like it with a little bite but it tastes good either way.* When it is done, I add a touch of*low sodium soy sauce.

Hi Dawn,
I found this recipe. It is core...........
I just like to make the rice and salsa. So here goes. It is super fast to make and yummy.
Mexican Chicken and Rice Dinner
*
16 oz chicken breast,no skin, no bones
1 cup salsa
1 1/3 cups water
2 cups instant brown rice
1 cup corn

**Just spray a large skillet with cooking spray and heat over medium heat. add chicken and cook until done. Remove chicken from the skillet and put on the side.
Now to the pan, add water and salsa(i just start here sometime and omit the chicken)
,stir and bring to a boil.
Stir in rice and corn. Top with chicken, cover and cook on low heat for 5 minutes
or until rice is tender. Serves 6
I am probably going to make the rice and salsa tonight. I add beans, corn and put
some extra salsa on the side. Yum!!

Okay friends. I need help with recipes...

I count calories, so I need LOW calorie meals, and more importantly, side dishes. Side dishes at dinner seem to be a struggle for me...I do check Weight Watchers and All Recipes frequently, but they dont seem to have QUICK down yet...
*
Breakfast and lunch I have down...
*
I need QUICK with few ingredients...Both DH and I work full time and dont get home till about 6, so if its not quick, I dont mess with it!
*
So if you have any ideas, I would love to hear them here!!!!!

We are NOT picky in anyway and will try anything once. Veggies, tators, etc...

Hi Dawn this is what our family does: steam all veggies, use brown rice, slice pototoes and bake them,make the nite before a pasta salad using low cal Italin dressing and whole wheat noodles add tomatos and what ever you like in it,fetta cheese is good! cut acorn squash in half and put low cal butter and spices into them and bake (yummy) plan ol cottage cheese and carb fruit is great as well. These are some of the things we eat for sides. Hope it helps.

I usually just steam some broccoli, brussels sprouts*or cauliflower, or open a can or two*of veggies.* Sometimes I'll spice things up by adding onion and garlic*to green beans or jalapinos to whole kernel corn.
You might try sauteing mushrooms with a bit of pepper and parsley, or carmalizing some onions.* Micheal love cooked onions.* They can both cook while you're getting everything else ready, and they don't take long.
