Here is a moderately healthy recipe you and your guests will enjoy.** *


Garlic Braised Chicken w/ Lemon & Rosemary Potatoes

Adapted from Feb. 2006 Natural Solutions


Servings:* 4
Calories:* 375

1/8-1/4 c. olive oil
4 skinless chicken breasts, cut into bite sizes
12 cloves of minced garlic
1 bay leaf
3 small or 2 medium red potatoes (Small is about 3" in diameter)
5 tbsp. dry white wine, such as Clois du Bois
1/2 tbsp. freshly chopped rosemary
Zest of 1 lemon, finely grated
10-15 green or black olives, pitted and chopped
1 c. low sodium chicken broth
2 tbsp. of lemon juice
Salt & pepper to taste

1)* Preheat oven to 400F.

2)* Heat olive oil in medium high heat in an oven proof frying or cast iron pan.* Note:* Most stainless steel pans today cannot heat beyond medium temperature.

3)* Add chicken, garlic and bay leaf.* Cook for 8-10 minutes until slightly brown. *

4)* Cover pan with foil and bake in oven for 20-25 minutes.

5)* Meanwhile boil the potatoes for 8-10 minutes or until slightly tender.* Leave the skin on.** Cut the potatoes into bite sizes.

6)* Add wine, potatoes, rosemary, lemon zest, olives, broth, salt & pepper into chicken batch. Heat in oven for another 10 minutes.

7)* Toss in the lemon juice, add some salt & pepper, and serve with some over rice.
