This is a very good soup to fill up on.* You can make it however you want but I will post the origianl recipe..* Last night I made it with nappa cabbage instead or green cabbage, and I used beef broth (which I find to have the most flavor) But I would recomend that you just add whatever you like or use whatever broth you like, Ive tried them all!
0 Point Garden Vegetable Soup
Estimated POINTS® Per Serving | 0
Servings | 4

Ingredients
2/3 c sliced carrot
1/2 c diced onion
2 minced garlic cloves
3 cups broth
1 1/2 c diced green cabbage
1/2 c green beans
1 tbsp tomato paste
1/2 dried basil
1/4 tsp dried oregano
1/4 tsp salt
1/2 cup diced zucchini

In a large saucepan, sauté carrot, onion, and garlic over low heat until softened, about 5 minutes. Add broth, cabbage, beans tomato paste, basil, oregano, and salt; bring to a boil. Lower heat and simmer covered about 15 minutes or until beans are tender. Stir in zucchini and heat 5 minutes.

That sounds great. Can you do it without the cabbage? What would be a good substitute?

Of course!* You don't have to put cabbage of any kind if you dont want... Kale or leeks would probably be good or maybe even some spinache would be nice.* If you don't like any of those options you could just leave it out.. add some mushrooms instead.
