Default Trouble eating enough calories

Hi,

I am a bigger guy that is trying to lose weight. I work out 4-6 days a week, but mostly sit at my desk all day. Considering my lifestyle, without counting what I burn off with exercise, I should be eating over 3300 calories per day to maintain my current weight. Take off 500 for fat loss and that puts me at 2700. Let's say I have a decent work out and burn 400 calories. Taking 500 off of 3700 is 3200.

It is surprisingly hard to consume 3200 healthy calories every day. I am worried that if I don't eat enough, than I won't see results. I also do not want to eat junky food just to get to a calorie count, that would be counter productive.

What are some healthy foods I can eat that are higher in their calorie count? I also cannot afford to break the bank on my diet.

I know its a "rich man's" problem, but it is still a problem.

(one thing I have tried is to use a teaspoon of olive oil instead of salad dressing. 120 easy calories.)
