Default 60 calorie banana muffins

Prep time: 15min* Bake:* about 20min
24 muffins, normal size, not mini!!
60 calories each
1c. sugar
1/4 c. applesauce
1/4 c. butter/margarine
2 large eggs
1 1/2 c. mashed*ripe banana (3-4)
1/2 buttermilk (or 1/2c 1% or nonfat mixed with 1t vinegar or lemon juice)
2 1/2 c. all purpose flour (I used whole wheat and it was so yummy)
1t vanilla
1t salt
1 1/2t baking soda
Heat oven to 350
mix sugar, margarine and applesauce in a large bowl.* stir in eggs until well blended.* add bananas, buttermilk and vanilla. beat until smooth.* stir in flour, baking soda and salt just until mixed/moistened.
pour into 24 muffins, probably should grease or spray the tin, i used paper liners to make clean up easier.*
bake about 20 min.* cool completely (yeah right lol) they are good warm though.* I think they should be cooled before you store them though.* 4 days at room temp, 10 days in fridge, 3 months in freezer.
Don't be scared to use whole wheat.* These might be 1 point each, if you use weight watchers.* They are low in fat and only 60 calories so I believe they would be, especially if you used whole wheat to add a little fiber.
