Hello Mandi! I am also a vegetarian (have been for around 9yrs), trying to figure out what to eat without being same ol' same ol' can be hard! I eat a salad almost everyday, it consist of roman lettuce, cucumbers, bell peppers, carrots, radishes, onions, broccoli, sunflower seeds, and diced veggie pepperonis (raisins and dried cranberries are also wonderful on it!). I add fat free cottage cheese on top (once on my plate) and light salad dressings (I am using 2cal spray ons now). It is very very good! Also I my house we eat a lot of mexican food. In the summer cold taco salad is a favorite. In a colander drain and lightly rinse a can or two of chili beans. Add then into a bowl with enough French salad dressing to cover them (careful, don't get to much!). Add chopped lettuce (roman or spinach) and onions (optional) to the mix. For the shells you can use corn chips, fry tortillas or what I like to do is grease a cookie sheet with olive oil and bake tortillas in the oven. Once they are golden brown let them cool and break them up into the salad and stir. Some people like to set the salad sit so the shells are soften so whatever you want to do. If the salad is to dry you can add more dressing, you can serve with cottage cheese.
Another favorite eats up your carbs but in small portions it is wonderful. Peal and cube a couple of potatoes, place the potatoes in a baking dish and cover with 1 can of diced tomatoes (juice too) and add a slice up an onion if you like. Sprinkle salt, pepper to taste along with a teaspoon of oregano, melt a few table spoons of butter (I use smart balance) and pour over the dish. Cover with foil and cook in the over at 400 until the potatoes are done and there is very little juice (you may need to take the foil off for a while if you use onions). This is simply delicious!
My favorite monthly treat is pizza!! I make mine with fresh wheat flour that I mill myself but bagged whole wheat flour works as well. In a mixing bowl (I use my kitchen aid mixer with bread hook) add 1 cup of warm water, 2 tablespoons of yeast, 2 tablespoons of sugar, 2 tablespoons of olive oil and 1 tablespoon of salt, let mix at low speed. In a measuring cup add one cup of milk and ½ of a cup of oat mill, put in the microwave for a couple of mins until the milk is pretty warm, let sit until the oatmeal starts to soften (not completely soft like you are going to eat it). Add 2 eggs to your mixer bowl (can just use whites), add 1 tablespoon oregano and 1 TBS of basil, let mix. Once the oats start to soften add mix to the mixer bowl (MAKE SURE that the milk is not hot or it will kill the yeast) mix well. Start to add flour cup by cut until the dough is sticky (will stick to hands) but with an elastic texture (if you pick it up it will stick to your hands but not run, careful not to get to much flour or the dough will be tough). Cover the bowl and let rise in a warm place, also pre-heat your oven to 400. Once dough had double in size use olive oil to well grease a 12” pizza pan (or at this point you can form the dough into a loaf, it makes wonderful bread). Grease you hands and work half of the dough onto the pan (makes 2 thick shells, once cooked the shell and be covered well and go into the freezer, next time you want it set it to thaw for an hour or so). At this point you can add seasoned tomato sauce and cheese (veggie pepperonis) and cook until the edges of the pizza are brown and the cheese has slightly browned around the edges (make sure to check the middle of the pizza and make sure it is done). If you want a veggie pizza while you are mixing the dough sauté onions, tomatoes, and peppers until there is no juice left. If you add veggies you will need to pre cook the pizza shell until it is slightly brown on the bottom. When it is pull it out and add sauce, veggies and cheese. This pizza is very filling, I usually only eat a slice with salad, very good!
We also eat whole wheat pasta with tomato salad and brown rice with homemade stirfry often.
