Default Smoked Turkey Baked Chimichangas

Here's a recipe to drool over!!* * Only about 350 calories per chimichanga according to my calculations...and oh so delicious!* Of course, you can modify to decrease calories (i.e., sour cream).


1 lb thick sliced deli turkey, cubed
1 TBS chili powder
8 oz tomato sauce
1 chipotle in adobo

flour tortillas (8")
6 oz pepper jack cheese
sour cream
cilantro

Preheat toaster oven to 400 degrees F.

season turkey with chili powder and then mix in tomato sauce, chipotle in adobo, and cabbage.* Lightly heat tortillas in microwave and then put about 1 oz cheese on tortilla edge followed by some of the turkey mix.* Tuck ends and wrap tightly. Lightly cover bottom of pan with olive oil and also cover the tops of the chimichangas with olive oil.* Bake until golden brown.* Top with 1 tsp of sour cream and some cilantro and enjoy!

I have a recipe similar to this, but its called Baked Chicken Chimichangas, but you can add anything: chicken, beef, turkey, or pork. According the calculations, it is about 258 calories per, 9g of fat, 28g of carbs. Here's the recipe:
8 oz. cooked chicken, turkey, pork or beef (about 1 1/2 cups)
1 8oz jar of salsa (recipe recommends mild, but I use medium)
1 16oz can fat-free refried beans
1 4 1/2oz can diced green chili peppers, drained
3 tablespoons thinly sliced green onions
4 oz reduced fat monterey jack or cheddar cheese, shredded (about 1 cup)
8 8-inch flour tortillas (I use whole wheat tortillas, but its a personal choice)
Fat-free sour cream (optional)
Preheat oven to 350 degrees
Using 2 forks, shred cooked poultry, pork, turkey, or beef. In a large skillet, combine poultry or meat, the salsa, beans, chili peppers, and green onions. Cook and stir over medium heat until heated through. Stir in cheese.
Meanwhile, wrap tortillas in foil, warm in oven for 10 minutes. For each chimichanga, spoon about 1/2 cup of the meat mixture on a tortilla, fold in sides and roll up.
Place in a baking pan (13x9x2). Bake, uncovered, in a 350 degree oven for 15-20 minutes, or until tortillas are crisp and golden brown.
If desired, serve with sour cream and addtional salsa or green onions.
