Caramalized Onion and Peameal Breakfast Sandwich
My boyfriend and I are heavily involved in food culture (He's a professional chef and I'm on my way to being a Pastry Chef) so we have very specific feelings about food and diet! So I'm going to do my best to post our hits for all to enjoy. It's a challenge to have delicious and healthy meal that are low in fat and calories. Onion and Peameal Bacon Breakfast Sandwich 1 onion sliced pinch of sugar pinch of tarragon splash of Worchestershire Sauce splash of white wine vinegar. 2 slices of peameal bacon 2 eggs, fried slightly runny yolk. (Omegga-3) Your favorite bread toasted. First start with Caramalizing onions. You can caramalize a few onions and store in the fridge for future meals. Great taste and so little evil things in it. In a medium hot skillet with a little olive oil (cooking spray just burns) saute the onions and add the following 4 ingredients. Cook until brown and caramalized and then set aside. Cook your eggs how you like them. Over Easy is my preference. Cook your peameal until cooked (about 3 minutes) So grab your bottom slice and season it how you like. I use a non-hydrogenated omegga-3 rich margarine and pepper. Now, layer your onions, egg and peameal. Top with the top slice and eat your way to happiness. This has around 250 calories and depends also on the type of bread you use. I've used this recipe with protein bread and it's just delicious and perfect for the after morning gym excursion. Enjoy!
