Ok, made the meatloaf tonight. Really good. Didn't much care for the potatoes. I will make the meatloaf again though!

Class! Class! Be quiet please. Please be quiet. Molly! Please, stop passing notes in class, be quiet and look forward. Thank you. Now, please look in your cookbooks and turn to page 119. For your homework you are to make the "Teriyaki-Ginger Pork Tenderloin". Also notice the Curried Rice preparation at the bottom of the page. If you eat the pork with this rice add those ingredients to your list. I will make this minus the raisins. Now, class dismissed.


Teriyaki-Giner Pork Tenderloin
Ingredients:
1 (1-pound) pork tenderloin
Cooking spray
1 1/2 tablespoons roasted garlic or regular teriyaki sauce
1 1/2 teaspoons cornstarch
1/4 teaspoon ground ginger
1 (6-ounce) can pineapple juice

Trim fat from pork. Slice tenderloin into 1/2-inch thick slices; flatten slices with palm of hand. Coat a large nonstick skillet with cooking spray; place over medium-high heat until hot. Add pork, and cook 3 minutes on each side or until browned.

Combine teriyaki sauce and remaining 3 ingredients, stirring well. Add to pork in skillet. Bring to a boil; reduce heat, and simmer 3 minutes. Remove pork from skillet, and spoon sauce over pork.

Makes 4 servings.
Fat = 3 grams per serving Calories = 161 per serving

Curried Rice
Prepare 2 cups cooked rice using 1 regular bag boil-in-bag rice. Add 1/4 teaspoon slat, 1/2 teaspoon curry powder, 2 tablespoons raisins, and 2 chopped green onions to cooked rice, and stir.

Fat = 0.4 Calories = 149


Oh, and no excuses! The dog did not eat your cookbook!

Yum! Well, I haven't recieved mine yet.

I liked the meatloaf, too, but I couldn't find the frozen mashed potatoes, so used the box kind, they were just ok. The meatloaf was very tasty!

I'm with you on this one, WW--no raisins for me either! Sounds like some good recipes, though, and I look forward to giving them a try this weekend!

Am I the only one who likes raisins? I'm gonna try this on Sunday, too. I may invite my mom over, since Ted is gone.
