I love roasted vegetables. They are real easy to make, just chop veggies in small pieces. I use onions, garlic, brocolli, cauliflower, red potatos, carrots, celery. Then I put them in a bowl, add spices and about a tablespoon of oil, then put them in a pan and roast them at 400 for an hour (covered).
I eat roasted veggies as a side dish. I put it in burriottos with greens. I puree them and make soup or stew.
I roast all my extra veggies before I shop for new ones, and then have them around in the fridge. Even great as a snack.
