Default What's For Dinner?

A very simple challenge to brainstorm or just post dinner ideas and plans - to beat any desire to eat out TONIGHT!

Dinner tonight:

Hubby: the rest of heart-healthy bolognaise sauce with whole wheat pasta
myself: 2 egg omlete with 1/3 cup of canned mushrooms my baby decided not to finish, basil & a tiny bit of LF Cheddar with a fresh tomato and a slice of whole wheat bread on the side.

dessert: Coffee Zucchini Loaf 1/2 slice with 1 cup of canteloupe, 1/2 container of Source vanilla yogurt and lotsa cinnamon.

My baby hopefully will eat some pasta and fruits, maybe tomato?

I did beautiful meat stock this weekend (pork bones and stweing beef as the base), so I am going to go with a hearty soup.

I think from what I have in the fridge, I'll go with snow peas, dry shiitakes, red bell pepper, carrots and tomato, plus barley for starch. And onions of course, lotsa onions!

For dessert, I am making chocolate bliss cookies with macademia nuts for the Saturday's housewarming party, so 1 cookie each (stockpile the rest!!!), with a side of canteloupe and yogurt. Or, maybe peach on the side? We'll see if they ripened I wish I had strawberries, that would have been absolutely *perfect*. Hmm, maybe I should pick some on the way home....

I am going to stew some of that leftover pot-roast with prunes, garlic and onions and serve with broccoli and brown rice

A cookie (Chocolate Coma) with a bit of canteloupe and yogurt for dessert.

I really wish I had something to add here Leida, but cooking is the worst aspect of my get-healthy journey yet. I just wanted to say HI, this is a great idea, and I hope you get some like-minded recipe-makers in here to join you. (Plus I might steal an idea or two eventually so I wanted to see what you were up to. )

Heya, I can't help it, I just looooooove cooking! If you need ideas for something sitting in your fridge, bring it on, we can brainstorm something!

I just got free slow-cooker at my grocery chain, so I have like 5 books on order from the library! I am very excited to learn to use it, seeing how it should save me time

Free slow cooker? Cool! If you come across anything really tasty, pass it on.

My mom got me one last Christmas, but the only dish I've made in it so far is chili! (Not even GOOD chili! lol) The idea of putting ingredients into a pot in the morning and lifting the lid to find dinner in the evening is VERY appealing, but I just haven't invested the time in finding good recipes. I don't really have much patience for trying things out; I tend to stick with the tried-and-true, unless something comes highly recommended.

I made three different chillis in slowcookers for my chilli fundraiser for the Run for Cure, and this one was awsome:

Pineapple chili sounds good to me. Is it sort of a sweet-spicy thing? My favorite salsa is mango-pineapple-chipotle. LOVE the sweet/spicy!

Anyway, yesterday I turned my sweet potato and lentil dip left-over from the party into hot, thick soup via adding some broth, water and tomato paste with baked tortilla and pita wedges. I loved it, but mu hubby said he is more into the dip version of it.

So, that's what he's getting tonight A couple of our friends who didn't make it to the party are dropping by for the leftover night.

It will be something like left-over koulebyaka with marinara, spinach and lentil dips with baked tortilla and pita wedges & veggies, and I will bake some bananas with rum sauce & cocolate cookie crumbs for dessert. I will skip ice-cream myself, but top the bananas with it for the non-dieting folks!

Very much the same dinner tonight (koulebyaka slice, dips, veggies and baked chips), except I will throw in the last 3 peaches on the verge of giving up on life into the left-over rum sauce for dessert, and this time I *will* skip ice-cream over it!
