BAKED PEARS WITH CRANBERRIES

Not everyone likes pie during the holidays, so why not make Baked Pears with Cranberries and Walnuts? If you don't have pomegranate juice, use cranberry juice, red wine or apple cider instead. Enjoy with a scoop of low fat frozen yogurt or whipped topping sprinkled with a little cinnamon or nutmeg.

Cook Time: 20 minutes

Ingredients:

3 ripe but firm pears, peeled, cored and quartered
1/3 cup pomegranate juice
1/2 cup dried cranberries
1/4 cup chopped walnuts

Preparation:

Preheat oven to 350 degrees.
Place quartered pears in a baking dish. Drizzle pomegranate juice over pears. Sprinkle cranberries and walnuts over the top. Bake for 20 minutes, or until pears are tender. Serve with juices and fat-free or low fat frozen vanilla yogurt.

Hello! I had a nice walk last night on a new route, with my daughter and her friend and the friend's 2 dogs. We enjoyed ourselves so much we even went further than we had planned and had a lot of fun! I love walks like that!! I have battled feeling so much disappointment in myself for gaining 3 pounds back this week. I know I will be back to 235 soon, and back on my way to my Christmas figure haha. I really want to believe i can make it down to 200, but the more calories I cut back on, the more i deal with hypoglycemia so the more I have to eat. That's how I gained the weight. I cut out too many carbs I think. It's frustrating dealing with all these things to figure out what works. I almost believe that I am having more hypoglycemia because my diet is working and then the walking is too and the pills are just too much. I don't know tho. Will see.

Well They Seem To Think That We Are Going To Be Hit Agian By Ike This Time. We Are Prayng That He Goes The Other Way.

Fall Is Just Around The Corner And I Love That. We Have All Kinds Of Festivals In The Fall And They Usually Sell Lots Of Homemade Christmas Items. So I Am Looking Forward To That. It Is Also A Great Way To Finish Up Christmas Shopping.

I Will See You All This Evening, I Am Going To Take Megan Outside To Play For A While.
