Pumpkin Spice Cake Recipe

Notes:
Moist, low calorie spice cake.
Servings: 20
Ingredients:
1 box Spice Cake Mix
15 oz. can of pumpkin
½ cup water
Directions:
Combine ingredients and mix well with mixer. Pour into lightly sprayed 9×13 baking pan. Bake at 350 degrees for 32-35 minutes. Cool. Cut into 20 pieces. Serve with fat-free Cool Whip. 1 point per serving.
For bundt pan, spray lightly and bake 38-40 minutes or until done. Can heat 2 Tbsp. of canned cream cheese frosting in microwave and drizzle over cake. Serves 20. I point per serving.
I like to divide batter into lightly sprayed muffin tins and bake about 20-23 minutes. This way it’s already portion ready and easy to grab for breakfast.

Impossible Pumpkin Pie Recipe

Notes:
Pumpkin pie that makes its own “crust”.

Servings: 8

Ingredients:
2 c. canned pumpkin
1 ½ c. fat free skim milk
¾ c. Splenda
½ c. Bisquick reduced fat baking mix
2 T. unsweetened applesauce
2 ½ t. pumpkin pie spice
2 t. vanilla
½ c. fat free egg substitute
Cool Whip (optional)
Nutmeg (optional)

Directions:
Preheat oven to 350 degrees. Combine first 8 ingredients in a large bowl. Stir mixture with a whisk for 2 minutes. Pour into a 9” deep dish pie plate coated with cooking spray. Bake for 50 minutes or til set. Cool completely. Serves 8 at 1 point per slice. Can top with Cool Whip but add points (if any) for this.

I am ashamed to see I maintained! I would like to lose 2 lbs. a week! I am going to get my butt in gear with excercise and stop making excuses for it!

Thanks Sandy for the recipes!

I planted 8 special pumpkin seeds that are guaranteed to grow humungous pumpkins, like the ones that you see at fairs. I was getting a lot of blossoms, and some baby pumpkins started to grow. I planted corn with them, and some bell peppers, some tomatoes, and some butternut squash. Well, the corn was eaten almost immediately by beetles. I didn't want to spray anything because I wanted an organic garden. The tomatoes all died, and the bell peppers were looking good, and then caterpillars got all over them. i actually got one butternut squash tho. The pumpkin vines started turning yellow and all the babies died. I was pretty sad about it. I guess I am just not the farmer! Next year I will be using bug spray I guess!!!

Check online or at a nursery about 'beneficial plants'. I alway used to plant Marigolds and Zinnias between my rows of corn... kept the pest away. And it sounds like your squash/pumpkins didn't get pollinated...? There are natural sprays you can use if you want to go organic.... like a week solution of dish detergent to keep aphids away. Sorry about your crop failure, better luck next year. In the meantime, your local grocery store should have organic produce.
