Sure!! Let me warn you first to half or quarter it, because it makes 40some cups

!! It does freeze well and i know this because I am the only one in my house who will eat it too. Also, the longer you let it cook, the "stewier" it gets. I think the best is to let it stew for at least a day. I like to put it on the woodstove in the winter for 2 days. You can add other things to it, like very lean ground turkey or maybe chopped up tofu(have never tried this) for a protien, just remember to add the calories on. It is so low calories, you can do a lot of add ins and still not go over 100 cal. per serving.
2 onions, chopped
4 cloves garlic, minced or finely chopped
4 carrots, cut into coins
4 cups green beans, cut into thirds
6 celery stalks, sliced
4 cups broccoli florets
20 (about two packs) mushrooms, sliced
2 cups fresh spinach (or 1 frozen 10 oz. pack)
1 quart diced tomatoes (I can my own tomatoes, so I'm not sure how much this would be fresh or store bought. Probably about 3 tomatoes fresh or 2 regular sized cans.)
1 head of cabbage
2 packages onion soup mix
1 cup brown rice (or you can use 1 cup of barley and reduce the calories even more. I personally like barley better.)
4 tsp. beef bouillon
spices to taste (I use cayenne pepper, paprika, seasoned pepper, and parsley but you can use whatever you like)
30 to 35 cups water
Put 2 cups of water in your pot and add the onion and garlic,let that simmer a little, then I just keep adding the veggies and covering with water as needed. After all the veggies are added, I put in the soup mix and get it boiling. Then I add the rice(or barley) and the rest of the spices. I let it cook for a long time. The least I have done is 2 hours, I think. Thats it. Kinda a no brainer, just add whatever veggies you like and cook, lol.
When I warm up a bowl, I always add more cayanne, because it's supposed to boost metabolism, plus I like spicy. It does get boring after a while, but its a nice mindless lunch (or dinner), that takes like 3 minutes to make. Enjoy
