Janna, being from the southwest and all, have you ever put hominy into your taco soup? I love it, but dh is convince he hates hominy so I leave it out most of the time!

No i have not! Honestly i dont think i have ever tried hominy.. What does it do point wise? Im a really picky eater so i prolly fall in the same category as your husband lol

Hey there, I haven't tried this yet, but I got it in an email from Hungrygirl.com the other day. Sounds good, could be tweaked a bit to be core.

PER SERVING (entire recipe): 179 calories, 3.5g fat, 367mg sodium, 40g carbs, 11g fiber, 3g sugars, 7g protein -- POINTSŪ value 3*

Ingredients:
1 packet Quaker Instant Oatmeal, Regular
1/4 cup Fiber One bran cereal (original)
1/4 cup light vanilla soymilk
2 tbsp. canned pure pumpkin
2 tbsp. Fat Free Reddi-wip
1 tbsp. sugar-free maple syrup
1/4 tsp. pumpkin pie spice (or cinnamon)
5 sprays I Can't Believe It's Not Butter! Spray
1 no-calorie sweetener packet (like Splenda)
dash salt

Directions:
Place all ingredients except for Reddi-wip in a microwave-safe bowl. Add 1/4 cup water and stir. Microwave for 45 seconds, stir, and then continue to cook in the microwave for 30 - 40 seconds. Once oatmeal has thickened, remove bowl from the microwave. Add the Reddi-wip, and stir well. Then enjoy the best bowl of oatmeal you've EVER tasted!

10 Minute Core Soup
(made this up as I went with what was in the cabinet)

1 can of pinto beans
1 can of kidney beans
1 can of corn
1 -2 cans of diced tomatoes
1 pkg of onion soup mix

Pour all together (juice and all) and let it simmer. You could add lots of extras to this to make it different..veggies such as mushrooms, peppers, onions, chillis, etc, hot sauce, salsa, etc.

Taco Omelette... this is a great low carb breakfast!
two whole eggs
browned, ground beef (or turkey) seasoned with taco seasoning
peppers (the hot ones work best for me, but any kind will get the job done)
shredded mexican style cheese
salsa
for those not doing a low carb, you can add onions, tomatoes, sour cream, or anything else you put on your taco.

just make this like you would make any other omelette! It's amazing!

Hey Janna, I just saw your comment about hominy. It doesn't change the points because of the fiber, but you can substitute it for the corn for a change of pace. Hominy is related to corn or something like that. LOL

This came today in my email, lol.

HG's Cravin' Cap'n Crunch Shake

PER SERVING (entire shake): 182 calories, 3g fat, 245mg sodium, 35g carbs, 4g fiber, 18g sugars, 4g protein -- POINTS® value 3*

Ingredients:
5 oz. Unsweetened Vanilla Almond Breeze
1/2 cup Breyers Double Churn Free fat-free ice cream, Creamy Vanilla
1/4 cup Cap'n Crunch cereal (original)
1 oz. sugar-free vanilla syrup (like the one by Torani)
1 tsp. Coffee-mate Fat Free or Sugar Free French Vanilla powdered creamer, dissolved in 1 tbsp. warm water
3 no-calorie sweetener packets (like Splenda)
1/4 tsp. vanilla extract
2 tbsp. Fat Free Reddi-wip
edit by lizzy- did some tweaks- could only find the breyers sf not ff ice cream, couldnt find the powdered creamer so used the ff liq creamer about a tbsp, skipped the redi whip and the splenda- still tasted good!!
Directions:
Place all the ingredients in a blender, and then blend with 3 beautiful ice cubes (I hate lame ice). One at a time, add more ice cubes and then resume blending, until your ideal consistency is reached. (I like my shakes pretty thick, so I end up using about 5 - 7 cubes in total.) Then pour your shake into a glass, and top it off with the Reddi-wip!

Pizza a la Barb

Really can't take credit for this one! I got it from my Smash fit site!

It's really good I was quite surprised!


Crust
1 cup oatmeal
1/2 can garbanzo beans
1 egg white
1 tsp. extra virgin olive oil
basil, oregano, italian seasoning, garlic salt to taste

Blend ingredients in blender or food processor until smooth. You may add a little water to loosen up ingredients make sure to keep the doughy consistancy.

Bake in oven at 400 degrees until edges lift from pan and crust looks cracked.

Remove from oven and add
1 slice of tomato as a base (like pizza sauce)
green peppers
mushrooms
(whatever veggies you want)

I added red onion!

Top with veggie shreds mozzarella flavored cheese

put back in oven until cheese is melted and begining to turn brown!

Like I said I didn't expect it to be as good as it was! Sounds core~ish doesn't it?
