Hi all,

The recipes I've chosen for this coming Sunday (October 14th) are Barbecue Meat Loaf and Garlic Mashed Potatoes (pg. 94 for those who have the cookbook). The recipes are as follows for anyone who would like to try them and contribute a review:

Barbeque Meat Loaf - Work Time: 8 minutes - Cook Time: 25 minutes


Ingredients:
1 pound ground round
1/2 cup barbecue sauce, divided
1/4 cup frozen chopped onion, pressed dry
1/4 cup Italian-seasoned dry breadcrumbs
2 egg whites
1/4 teaspoon pepper

*Combine meat, 1/4 cup barbecue sauce, onion, breadcrumbs, egg whites, and pepper in a large bowl; stir well.

*Shape mixture into a 7- x 5-inch loaf on a rack in a roasting pan. Spread remaining 1/4 cup barbecue sauce over loaf. Bake at 375 degrees for 25 minutes or to desired degree of doneness.

*Yield: 4 servings.

Per Serving: Calories 228 (30% from fat) - Fat 7.6g (sat 2.6g) - Protein 27.7g - Carbohydrate 10.4g - Fiber 0.5g - Cholesterol 70mg - Sodium 535mg

Garlic Mashed Potatoes - Total Time: 10 minutes


Ingredients:
Garlic Powder
Fat-free Milk
1 - 22 ounce package Frozen Mashed Potatoes
Pepper
Salt

*While meat loaf bakes, combine 2 2/3 cups frozen mashed potatoes (one-half of a 22-ounce package), 1 1/3 cups fat-free milk, 1/4 teaspoon salt, 1/4 teaspoon pepper, and 1/4 teaspoon garlic powder in a 1 1/2 quart baking dish. Cook according to the package microwave directions.

*Yield: 4 servings
