Here is a salad that me and my family LOVE, we eat it once a week for dinner: Grilled Chicken Salad Place 8 cups of Romaine lettuce (or other salad greens- we use a spring blend), 1 chopped yellow pepper, 1 diced cucumber, and some chopped tomato in a bowl. Add Salsa Vinegrette (see recipe below), and toss well. Divide the salad evenly among 4 dinner plates/bowls. Place a 3 oz. piece of grilled chicken breast on top of each salad. Garnish with fresh cilantro or parsley. Servings: 4 200 calories, 39g Protein, 11g carbohydrates, 8g fat, 3g fiber Salsa Vinagrette Combine 1 cup salsa, 1/4 cup cider vinegar, 3 tablespoons extra-virgin olive oil, and 1/2 teaspoon pepper in a blender or food processor, and blend or process until smooth. Makes 1 cup of vinagrette. You can use this for a TON of recipes, so here is the breakdown if you want to add it to other recipes (the counts are already included in the grilled chicken salad recipe) Servings: 16, 1 tablespoon servings 28 calories, less than 1g protein, 1g carbohydrate, 3g fat, 0 fiber
