I also live alone and just cook for myself. I don\'t eat out. And I also have to deal with making too much and going back to the fridge to finish it off. Here\'s how things work in my world: almost nothing in my fridge is edibe without cooking (except fruit, bread and a glass of jam). My typical lunch will be a fillet of fish or a chicken thigh and some veggies. Now, you can portion out just the right sizes of fish and chicken for one meal, that\'s doable, right? Well, then, while you meat or fist in roasting in a pan, take out whatever veggies you have, steam or cook them, and that\'s your lunch! Now, in that way, you cannot make too much meat or fish, and if you make to much veggies, well, haha, throw them out. I don\'t feel guilty if I throw a little bit of vegetables away (or even if I end up eating them, hihi).
